gluten free vegan chocolate glazed banana muffins

These chocolate glazed banana muffins are pretty amazing.  Scrumptious banana muffins, topped with a simple vegan chocolate ganache.  Yes, vegan ganache does exist!  I use So Delicious coconut milk coffee creamer (the French vanilla is my favorite) with dairy free chocolate chips.  It's out of this world! gluten free vegan waffles

I like my waffles crispy on the outside and chewy on the inside.  It's the perfect combination.  Served piping hot, with a little Earth Balance buttery spread and pure maple syrup.  No high-fructose, fake stuff.  That's a big no-no in our house.  It's all about the real deal.  I also enjoy a little fresh fruit on top of my waffles.  Strawberries, blueberries, bananas.  What do you fancy? gluten free honey oat muffins

gluten free vegan coconut lemon cupcakes

chocolate banana chia seed pudding

Three ingredients.  Chocolate coconut milk, chia seeds, bananas.  Doesn't get much easier than that!  I was craving a chocolate version of chia seed pudding and I remembered that I had some So Delicious chocolate coconut milk in the fridge.  I poured some into a mason jar, sprinkled on the chia seeds, and shook it up.  A couple hours in the fridge and it was ready to go! gluten free vegan raspberry hand pies

Does anyone remember those "home run pies" you would get as a kid?  They were about 50 cents at the grocery store and came in all different flavors.  My favorite was cherry.  Or maybe chocolate pudding!  It was a pretty cool treat because it was pie, that you could hold in your hand.  We would get super excited when my mom would buy them for us.  They may have been about 90% artificial, but they sure did taste good!
