gluten free vegan waffles

I like my waffles crispy on the outside and chewy on the inside.  It’s the perfect combination.  Served piping hot, with a little Earth Balance buttery spread and pure maple syrup.  No high-fructose, fake stuff.  That’s a big no-no in our house.  It’s all about the real deal.  I also enjoy a little fresh fruit on top of my waffles.  Strawberries, blueberries, bananas.  What do you fancy?

In the past few months, I’ve tried to make countless waffle recipes gluten, egg, and dairy free with no such luck.  So many failed attempts.  The texture was off.  They didn’t cook right.  I was about to give up, but they are my husbands favorite and he was missing his waffles.  We own this amazing waffle maker too.  I said I was close to giving up…but I’m so glad I didn’t!  I finally came up with a recipe that works and tastes pretty amazing.  This batch makes about 4 Belgian-style waffles, which are pretty big. My kids usually share one.  You may get more waffles, depending on your waffle iron.

SERVES: 4-5 waffles
INGREDIENTS
  • 2 1/4 cups Sarah's gluten free flour blend
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon sea salt
  • 2 cups So Deliciousunsweetened coconut milk, room temperature
  • 3 tablespoons Earth Balance vegan butter, melted*
  • 2 teaspoons pure vanilla extract
INSTRUCTIONS
  1. Whisk together flour, sugar, baking powder and salt. Set aside flour mixture.
  2. Add coconut milk, melted vegan butter and vanilla. Stir until just combined.
  3. Heat your waffle iron. Spray with cooking spray and pour batter into waffle maker (amount varies by iron). Leave 1-inch border on all sides.
  4. Close iron. Cook until waffles are crispy and golden brown, 3-5 minutes.
  5. Repeat with remaining batter. Serve nice and hot!
  6. *You can use 2 tablespoons melted coconut oil in place of the vegan butter.

    not sure what I did wrong, but I used 2 different waffle makers and had to scrape the batter off, they stuck horribly, even after spraying the irons a LOT with grape seed oil. I was bummed.

      Kimberly, I'm not sure why you're waffles are sticking. I've never had this happen and I've made this recipe countless times. I would try a different oil or spray. I love the coconut oil cooking spray from Trader Joe's. It works great!

      I'm having the same issue. Spraying the iron liberally seems to make it a bit better. And don't add more milk. It needs to be thick.

      They worked just fine frozen for my son — I did have to warm them up with the maple syrup already on them because they did get rather chewy, but fresh– there is NOTHING like them! Thank you!!!! 🙂

    I did these a few times now and they taste great. The only problem is that they're uncooked inside. What am I doing wrong?

      You have to cook Gluten Free Waffles longer then regular ones. Cook them until there is almost no steam coming from them:)

    These are wonderful. They turned out better then the recipe you have for buttermilk waffles. Crisp on the outside and warm and soft inside. Love all the recipes I have tried on your site so far. Keep the yummy recipes coming.

    I have been making these almost every morning!! I been trying different flours and milk and it all works great! Thank you Sarah!!! Our youngest is the most thankful – he is no longer crying in the morning while I try to figure out what he can eat that he is not tired of 🙂

    I love love love this recipe! I have a household with some needing GF and some not…I make these for everyone and no one can tell the difference! So yummy. Come out great every time.

    These waffles were a bit with my granddaughter who has multiple allergies, but also with the others in the family who have no allergies! I give them two thumbs up – if I had more thumbs those would be up too! Thanks for the recipe!
