Gluten Free Vegan Blender Pancakes. These pancakes are nutrient-dense and perfect for those busy mornings. I’m not the mom that makes a gourmet breakfast for my kids before they go to school. I got no shame in admitting that. It’s a bowl of cereal, scrambled eggs, breakfast bar or a bagel. If they are lucky, there might be some leftover muffins that I made the day before. With four kids to get ready, it’s gotta be quick and easy.

I usually save those big homemade breakfast spreads for the weekends. My kids usually request pancakes with hash browns and bacon on the side. I always serve it with some fresh fruit too. A good hearty breakfast really is so comforting and brings the family together. I even like to serve breakfast for dinner on a weeknight. Do you ever do that too? My kids think breakfast for dinner is the coolest and I’ll take all the mom points I can get!

Gluten Free Vegan Banana Oat Blender Pancakes. Bob’s Red Mill gluten free rolled oats and flaxseed meal make these pancakes nutrient-dense.I really wish my kids loved a warm bowl of oatmeal in the morning for breakfast as much as my husband and I do. Oatmeal with berries, almond butter and a little coconut sugar. So satisfying. My kids would just rather have a bowl of boring cereal. If I can’t get them to eat oatmeal, I’ll just make pancakes loaded with oats!

I’m so excited to share this recipe for gluten free vegan banana oat blender pancakes with you guys. They are made with Bob’s Red Mill gluten free rolled oats, as well as Bob’s Red Mill golden flaxseed meal. Both ingredients are PACKED with nutrients, including omega-3’s and fiber. So great for starting your day. I also use ripe bananas to help bind these allergen-free pancakes, along with a few extra ingredients you probably already have on hand.

You just dump all the ingredients into a blender, blend until smooth, pour onto a hot griddle and cook until golden brown. Easiest. Pancakes. Ever. I just love the simplicity of the ingredients as well. Nutritious, refined sugar free, packed with flavor and great for making ahead.

My favorite way to eat these hearty pancakes is with a good drizzle of warm nut butter {peanut butter is my go-to} and a few sliced bananas. They are also pretty tasty with a little maple syrup. I will say, these are not a fluffy pancake, but more of a thinner pancake. I love the texture and couldn’t stop eating them when they came off the griddle.

SERVES: 8-10 pancakes
INGREDIENTS
  • 2 cups Bob’s Red Mill gluten free rolled oats
  • 1 1/2 cups unsweetened almond milk or coconut milk beverage
  • 2 ripe bananas, sliced
  • 1/3 cup Bob’s Red Mill golden flaxseed meal*
  • 3 tablespoons coconut sugar
  • 1 tablespoon vinegar
  • 1 tablespoons baking powder
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon sea salt
INSTRUCTIONS
  1. Add oats, almond milk, bananas, flax meal, coconut sugar, vinegar, baking powder, vanilla and salt to high-speed blender. Blend on high until smooth and oats are ground, about 1 minute. Batter will be thin.
  2. Heat griddle or non-stick skillet to about medium heat. When hot, coat with cooking spray or brush with oil.
  3. Pour about 1/4 cup of batter onto pan and smooth out. Flip pancake when golden brown on underside and can easily be lifted, about 2 minutes. Repeat with remaining batter.
  4. Serve pancakes with sliced bananas and a drizzle of warm nut butter {if desired}.
NOTES
*Regular flaxseed meal will work just as well in this recipe.

    Could applesauce replace bananas?
