Exciting news around here. I’ve been asked to continue my role as a brand ambassador for Bob’s Red Mill! Eeeeek! I just love, love, LOVE working with this company. This past year was so amazing and such an honor promoting their products. You all know my tried and true flour blend is made up of their gluten free flours. I’d be so lost without Bob’s Red Mill.

I will be featuring different promotional Bob’s Red Mill products in my recipes throughout the year. From their gluten free oat flour to the almond meal. They will be sponsoring many of my recipes by providing the flours I need. This is one blessed gluten free baker!

We’ve all seen recipes on pinterest for chia seed pudding. Chia seeds are basically little seeds that work their magic when added to liquid {such as coconut milk}. It thickens and creates this pudding texture, similar to tapioca pudding. Only way healthier because chia seeds are packed with fiber!

This recipe is no ordinary chia seed pudding recipe. I’ve added Bob’s Red Mill hemp seed hearts, which are a complete protein. 5 grams of protein in just 2 tablespoons. They are also a great source of omega-3’s, just like those chia seeds. The slightly nutty flavor is super tasty in smoothies, on salads and in muffins. A little sprinkle of hemp hearts never hurt anyone.

This dairy free strawberry vanilla protein pudding can be made the day before so it’s ready as a snack, a dessert, or a morning treat. Layers of vanilla pudding and fresh strawberries. Any time of day is a good time to enjoy a bowl of dairy free strawberry vanilla protein pudding!
