Gluten Free Vegan Sea Salt Brownie Truffles. These decadent brownie truffles are coated in dark chocolate and a sprinkling of sea salt flakes.These gluten free vegan sea salt brownie truffles are oh so decadent! Gooey brownie bites coated in dark chocolate, with a sprinkling of sparkly sea salt flakes.

Making homemade, yummy treats to give to my family and friends is one thing I love to do for the holidays. From dairy free peppermint patties to mini loaves of gluten free pumpkin spice bread. I always wrap it up in cute packaging, add a personal tag and a little ribbon or twine too. Personalized and sweet. Homemade gifts really are the best. Don’t you agree?

With all of the holiday baking I will be doing this month, I can use all the shortcuts I can get! For these brownie truffles, I used Enjoy Life gluten free vegan brownie mix, which happens to be top 8 allergen free. There is also 5 grams of protein in this brownie mix and probiotics too. Yes, probiotics!

The Enjoy Life brownie mix calls for just oil and water. Easy, peasy. However, I like to change things up a bit when making these brownies, taking them to next level of deliciousness. I double the oil {making them fudgier}, add a little brown sugar {which is never a bad idea} and add melted dark chocolate chips {the more chocolate, the better}.

Once baked and cooled, I rolled the gooey brownies into little brownie bites. Some time in the fridge and they were ready to be dipped in chocolate! I used the Enjoy Life dark chocolate morsels, but you could also use their semi-sweet mini chocolate chips or mega chunks. All of their baking chocolate is allergen free and paleo friendly as well. It’s the one brand of chocolate I always keep stocked in my pantry, especially this time of year.

The most important step in making these sea salt brownie truffles is adding that gorgeous, sparkly sprinkle of sea salt flakes on top. Sweet and salty go so well together. The sea salt also makes these truffles so festive. Looks like a dusting of snowflakes. So pretty!

SERVES: 18-20 truffles
INGREDIENTS
brownies
  • 1 box Enjoy Life gluten free brownie baking mix*
  • 1/4 cup brown sugar or coconut sugar
  • 1/2 cup Enjoy Life semi-sweet mini chocolate chips or dark chocolate morsels, melted
  • 3/4 cup water
  • 1/4 cup sunflower seed or grape seed oil
chocolate coating
  • 1 cup Enjoy Life semi-sweet mini chocolate chips or dark chocolate morsels {I used a mixture of both}
  • 2 tablespoons sea salt flakes
INSTRUCTIONS
  1. Preheat oven to 350 degrees. Line an 8-inch square baking dish with parchment paper.
  2. In large mixing bowl, whisk together brownie mix and brown sugar. Set aside.
  3. To melt chocolate chips, place in small bowl and microwave 30 seconds. Stir and microwave additional 15 seconds.
  4. Add melted chocolate chips, water and oil to brownie mix. Stir just until combined.
  5. Spread brownie batter into prepared baking dish. Bake 30-35 minutes, until edges are crisp and center is still slightly gooey.
  6. Remove brownies from oven and place on cooling rack. Let cool 30 minutes in pan. Remove from pan, using parchment paper, and place on cooling rack. Allow to cool completely.
  7. When brownies are cool, trim crisp edges off of brownies {save for snacking or for ice cream}. Crumble remaining brownies into mixing bowl.
  8. Using cookie scoop, scoop out brownie. Take into hands and press/roll into ball. Makes 18-20 balls.
  9. Place brownie bites onto parchment paper-lined plate. Place in refrigerator for 30 minutes, until chilled.
  10. For chocolate coating, place 1 cup chocolate chips in small glass bowl. Microwave 30 seconds, stir, then microwave additional 15 seconds. Stir until melted and smooth.
  11. To coat truffles, sit brownie bites on top of tongues of fork. Dip into melted chocolate and gently tap off extra chocolate. Place on parchment paper-lined plate. Immediately sprinkle with sea salt flakes, before chocolate hardens.
  12. Place brownie truffles in fridge 10-15 minutes to harden completely. Store at room temperature or in refrigerator, in airtight container.
NOTES
*If you are unable to find the Enjoy Life brownie mix, you can also make a batch of these brownies. Then follow steps 6-12.
