Chia seed pudding has to be one of the easiest desserts around. It happens to be super healthy too! Chia seeds are packed with omega-3’s, antioxidants and fiber. All good stuff. They also magically thicken any liquid they are added to, making them perfect for whipping up a simple pudding. Sort of like a no-cook {healthier} version of tapioca pudding. 

Have you ever given chia seed pudding a try and just wasn’t a fan of the texture? I actually don’t mind the tiny seeds, maybe because I really like tapioca pudding. I know some don’t like the texture of chia seeds, so I wanted to give a smooth chia pudding a try. Couldn’t be too difficult, right?

Chocolate chia mousse. This healthy, dairy free dessert comes together in just minutes. Top with your favorite fresh berries!For this creamy, dreamy, chocolate chia mousse, you only need a few ingredients. Almond milk, coconut cream, cocoa powder, pure maple syrup and vanilla extract. Oh and don’t forget the most important ingredient. Chia seeds! I used a combination of almond milk and coconut cream in the pudding because I like the richness you get from the coconut cream. You could certainly just use all almond milk or your favorite dairy free milk.

When I said this recipe comes together quickly, I really did mean quick! Just dump all of the ingredients into your high-powered blender and blend on high 1-2 minutes. To your amazement, it instantly becomes a chocolate mousse. Because the chia seeds are being ground with the other ingredients, they are instantly becoming gelatinous, thickening the mousse. Once refrigerated, the mousse thickens even more and becomes the perfect, creamiest texture.

Look no further for the EASIEST, healthiest Valentine’s Day dessert around. This chocolate chia mousse is not only decadent and delicious, it’s also so pretty served in little glass jars, topped with beautiful fresh berries. Add a few mini chocolate chips and this dessert becomes irresistible!

SERVES: 4 servings
INGREDIENTS
  • 1 1/2 cups unsweetened almond milk
  • 1/2 cup coconut cream*
  • 1/2 cup chia seeds {I used white chia seeds}
  • 1/3 cup cocoa powder
  • 1/3 cup pure maple syrup
  • 1/2 teaspoon pure vanilla extract
  • pinch sea salt
INSTRUCTIONS
  1. Add almond milk, coconut cream, chia seeds, cocoa powder, maple syrup, vanilla extract and salt to high-powered blender. Blend on high 1-2 minutes, until completely smooth {scrape down sides as needed}.
  2. Pour chocolate mousse into 4 single serving dishes. Cover and refrigerate until chilled, at least 1 hour.
  3. Serve chocolate mousse chilled. Top with fresh berries, mini chocolate chips or sliced almonds {optional}.
NOTES
*Use thick coconut cream from canned coconut milk, scooped off the top. The coconut cream adds a richness to the chocolate mouse, but 1/2 cup almond milk in place of coconut cream can also be used.
