cookbook review + giveaway…Everyday Classics

Lexie, from Lexie’s Kitchen, was one of the first gluten free bloggers that I met after starting my blog, Sarah Bakes Gluten Free Treats. She was so sweet and so encouraging. I’ll never forget the kind words and support I received from Lexie. She has recently completed her first cookbook…Everyday Classics. I couldn’t be more proud of her, for taking on such a huge project! Putting together you’re very own cookbook is no joke. Many, many hours and I can imagine many tears, laughs, and hurdles along the way. Way to go, Lexie! Your cookbook is most certainly a job well done!

Everyday Classics includes 68 gluten, dairy, egg and soy free kid-tested and approved recipes. Most of Lexie’s recipes are corn free and you’ll find plenty of vegan (or easily vegan) options too. Everything about this cookbook is adorable. The colors, the layout, the photos. It’s totally my style. Lexie and I must have pretty good, I mean similar, taste.

We all love a good brownie. Fudgy, chocolatey brownies. These have a secret ingredient…avocado! It helps to keep them nice and moist. I don’t know about you, but I wouldn’t mind one of these right now with my morning cup of coffee. It’s a always a good time for a chocolate treat. 

the best chicken pot pie ever

Tender, flakey pie crust on top of a simply delicious chicken filling. The classic comes together with the use of leftover chicken (or turkey) and frozen veggies. Couldn’t be easier to make and your family will most certainly ask for seconds!

gluten, dairy, egg free pie dough

This pie die is the shining star of the Everyday Classics chicken pot pie. Lexie uses a combination of ground chia and flax seeds to create that elasticity found in all-purpose flour. This is a gluten free crust that can most certainly be used in all of your favorite pie recipes!

maple syrup sweetened marshmallows

Oh heavens. Don’t you just want to eat one of these right now? I’m a sucker for homemade marshmallows and I love that these beauties are refined-sugar free. I will most certainly be making a batch of these for my Valentine. Dipping them in chocolate too? Done.

My family devours pancakes when I make them. My kids can never eat just one. Lexie’s pancakes are perfect for Saturday morning breakfast. You will never know they are gluten, egg and dairy free. A good tip, make a double batch and freeze them for those busy mornings.

    I have celiac, but can do dairy and eggs (luckily) – but any new recipe that is good is worth trying to me. I don't care what is in it, or not in it, if it tastes good and is healthy.

    I would like to master something…one thing…anything! I recently learned that a gluten intolerance was a big factor in my chronic migraines, so my entire way of eating has to change. I am not creative in the kitchen, so this is a huge challenge for me! ๐Ÿ™‚

    I have been cooking gf for a few years now, but still haven't found a pancake recipe that my family LOVES! I found your site a few days ago when searching for a gf blueberry muffin recipe. I was so impressed with the results, I came back for more! I'm in the process of making your gf yogurt pancakes as we speak…the jury has yet to give their verdict, but I am hopeful:)! Thanks for all your hard work in the kitchen.
