guest post…gluten free vegan banana bread

May 28, 2013 by Sarah 8 Comments

My husband is a happy man when he comes home from work and sees a fresh loaf of banana bread sitting on the counter.  It’s like dessert to him.  He doesn’t have a huge sweet tooth, but he could eat a slice of banana bread every morning for breakfast.  Now if only I was super-wife and baked a loaf every week for him!

Today I’m sharing my new recipe for gluten free vegan banana bread over at Ask Anna.  It’s a good one!  The bread is naturally without eggs or dairy.  There is no lack of moisture  and your teeth will sink right into this tender bread.  You won’t be able stop at just one slice!

My family LOVES this bread. I added coconut flakes and chocolate chips instead of nuts 🙂

Finally, Gluten Free/Egg Free Banana Bread! Not brick. Not crumbs. Bread! Thank you for reworking our favorite quick bread.

We have egg/treenut/peanut/sesame allergies and must avoid soy and wheat too, so baking becomes a little challenging, but this recipe does the trick. And yes to adding chocolate chips or cocoa, I threw in some coconut flakes this morning it and was delightful!

I just made your banana bread recipe and it is soooo delicious! My daughters have severe nut, wheat and egg allergies so it was so refreshing to find a recipe we could use! I am also gluten free myself. I tweaked a few things to fit the ingredients I had in my house but it was such a great recipe to use. Thank you!

This is definitely the best gluten free banana bread recipe I've tried. It has a wonderful texture and is by no means dry or gummy. I had a bunch of ripe bananas in the house so I doubled the recipe and made muffins instead of loaves. It turned out wonderful. However, they were a little too sweet so I'll use less sugar next time since bananas have so much natural sugar. Also, don't use agave in this recipe because it over powers the other flavors. Great job on this recipe!
