I’m a snacker. Throughout the day, I have my hungry {aka grumpy moments} and I know I just need a snack. Yep, just like my kids. Usually between lunch and dinner, as well as sometime before I go to bed. Give me something to munch on and I’m good.

Peanut Butter Energy Bites. These little bites are made with just 4 ingredients and are great for on-the-go snacking!When it comes to snacks, these peanut butter energy bites are perfect for getting me through those “hangry” moments of the day! They are simply made with gluten free rolled oats, almond flour, peanut butter and pure maple syrup. 4 ingredients that come together to make a healthy on-the-go snack.

What are some of your favorite snacks? Do you go for the salty or the sweet? Sometimes I like a little bit of both. These peanut butter energy bites are great for making ahead and having throughout the week. Bring them to work, pack in school lunches or take with you on road trips. A little protein and a little energy!

SERVES: 14-16
INGREDIENTS
  • 1/2 cup creamy peanut butter
  • 1/4 cup pure maple syrup
  • 1 cup gluten free rolled oats
  • 1/2 cup almond flour
INSTRUCTIONS
  1. In mixing bowl, stir together peanut butter and maple syrup until creamy. Add rolled oats and almond flour. Mix until well combined.
  2. Roll heaping tablespoons of dough into balls. Place on plate, lined with parchment paper. Chill in refrigerator until firm.
  3. Store cookie dough bites in airtight container.
