gluten free vegan mini cinnamon apple loaves
SERVES: 2 mini loaves
  • 1 1/2 cups Sarah's gluten free flour blend
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1/3 cup So Delicious unsweetened coconut or almond milk
  • 1/3 cup brown sugar or coconut sugar
  • 1/4 cup maple syrup
  • 1/3 cup canola oil or melted coconut oil
  • 1 teaspoon pure vanilla extract
  • 2 apples, peeled and grated on large holes of grater
  1. Preheat oven to 350 degrees. Prepare mini loaf pan by spraying with cooking spray or lining with parchment paper.
  2. In large mixing bowl, sift together flour, cinnamon, baking powder, baking soda and salt. Set aside.
  3. Mix together applesauce, coconut milk, brown sugar, maple syrup, coconut oil and vanilla. Stir in grated apples. Add to flour mixture and blend just to combine.
  4. Pour batter into prepared mini loaf pans. Bake for 30-35 minutes or until toothpick inserted in center comes out clean.
  5. Allow to cool in pan for 10 minutes. Remove from pan and continue to cool on cooling rack. Slice and serve.
