gluten free vegan cranberry orange chocolate chip cookies

  • 1 1/2 cups Sarah's gluten free flour blend
  • 1 cup certified gluten free quick oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1/2 cup cane sugar
  • 1/2 cup brown sugar or coconut sugar
  • 1/3 cup coconut oil, melted
  • 3 teaspoons orange zest
  • 1/4 cup So Delicious Dairy Free unsweetened coconut milk or almond milk
  • 1/4 cup pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 cup dairy free chocolate chips
  • 1/2 cup dried cranberries
  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In medium bowl, sift together flour blend, quick oats, baking powder, baking soda and salt. Set aside.
  3. In large mixing bowl, cream together sugar, brown sugar, coconut oil and orange zest.
  4. Add coconut milk, maple syrup, and vanilla. Mix until creamy. Add flour mixture and stir until combined. Mix in chocolate chips and dried cranberries.
  5. Using cookie scoop, place heaping tablespoons of cookie dough onto prepared baking sheet. Slightly flatten with fingers.
  6. Bake cookies 11-13 minutes. Cookies with be golden brown on edges and soft to the touch.
  7. Place on cooling rack to cool completely. Store in air-tight container.
