gluten free vegan salted chocolate chip cookie bars
RECIPE TYPE: cookies
SERVES: 20 bar cookies
  • 2 1/4 cups Sarah's gluten free flour blend
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 3/4 cup brown sugar or coconut sugar
  • 1/2 cup cane sugar
  • 1/2 cup refined coconut oil, soft
  • 3 tablespoons pure maple syrup
  • 3 tablespoons So Delicious unsweetened coconut or almond milk
  • 1 teaspoon pure vanilla extract
  • 3/4 cup dairy free dark chocolate chips, plus 2 tablespoons {such as Enjoy Life Foods}
  • course sea salt, for topping
  1. Preheat oven to 350 degrees. Spray 9x13 shallow baking dish with nonstick cooking spray or line with parchment paper.
  2. Whisk together flour, baking powder, baking soda and salt. Set aside.
  3. In large mixing bowl of stand mixer, cream together brown sugar, canes sugar and coconut oil, 2-3 minutes.
  4. Add maple syrup, coconut milk and pure vanilla extract. Mix until blended. Add flour mixture and stir until combined. Stir in 3/4 cup chocolate chips.
  5. Press dough into even layer in prepared baking dish. Top with additional 2 tablespoons chocolate chips. Sprinkle sea salt over top of cookie dough.
  6. Bake cookies 22-24 minutes, until golden brown. Allow to cool in pan on cooling rack to cool completely.
  7. Slice into squares and store in airtight container.
