gluten free vegan peanut butter banana muffins

INGREDIENTS
  • 1 1/2 cups Sarah's gluten free flour blend
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 ripe bananas, mashed
  • 1/2 cup natural creamy peanut butter
  • 1/4 cup coconut oil, melted
  • 1/4 cup brown sugar
  • 1/4 cup cane sugar
  • 1/2 cup So Delicious unsweetened coconut milk or almond milk
  • 2 tablespoons pure maple syrup or honey
  • 1 teaspoon pure vanilla extract
INSTRUCTIONS
  1. Preheat oven to 375 degrees. Line muffin tin with paper cupcake liners.
  2. Sift together flour blend, baking powder, baking soda, and salt. Set aside.
  3. In large mixing bowl, stir together mashed bananas, peanut butter, coconut oil, brown sugar and cane sugar until creamy. Add brown coconut milk, maple syrup and vanilla. Slowly add flour mixture and stir until combined.
  4. Scoop batter into prepared muffin tin. Bake for 18-20 minutes, or until toothpick inserted in center of muffin comes out clean. Place muffins on cooling rack and cool completely.
