gluten free vegan molasses cookies
RECIPE TYPE: cookies
SERVES: 28-30
  • 1 1/2 cups Bob’s Red Mill gluten free 1-to-1 baking flour
  • 3/4 cup Bob’s Red Mill almond flour
  • 3/4 cup brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 6 tablespoons grape seed oil or sunflower seed oil
  • 1/4 cup molasses
  • 1/4 cup warm water
  • 1 teaspoon pure vanilla extract
  • 1/4 cup cane sugar, for coating cookies
  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In large bowl of stand mixer, blend together flour, almond flour, brown sugar, cinnamon, ginger, nutmeg, baking powder, baking soda and salt.
  3. Add oil, molasses, water and vanilla. Mix until cookie dough comes together and is well combined, 1-2 minutes.
  4. Scoop cookie dough using cookie scoop and roll into balls. Roll dough in sugar and place onto baking sheet. Flatten balls of dough with fingers or bottom of glass cup.
  5. Bake cookies 10-12 minutes. Cookies will be soft to the touch. Allow to cool on pan 5 minutes. Place cookies on cooling rack to cool completely.
