gluten free vegan pumpkin pie oatmeal

INGREDIENTS
  • 1/2 cup Bob's Red Mill certified gluten free steel cut oats
  • 1 1/2 cups water
  • pinch sea salt
  • 1/4 cup pumpkin puree
  • 2-3 tablespoons unsweetened almond milk
  • 2 tablespoons coconut sugar
  • 1/2 teaspoon pumpkin pie spice
  • pure maple syrup and chopped pecans {optional}
INSTRUCTIONS
  1. In medium saucepan, add steel cut oats, water and salt. Bring to boil. Reduce heat to low and continue to cook about 10-15 minutes, stirring occasionally.
  2. When oats are tender, add pumpkin, almond milk, coconut sugar and pumpkin pie spice. Cook an additional 2-3 minutes to heat through.
  3. Remove oatmeal from heat and pour into serving dishes. Top with drizzle of maple syrup and pecans. Serve warm.
