gluten free peanut butter pretzel granola bars

INGREDIENTS
  • 1 3/4 cups Bob's Red Mill certified gluten free rolled oats
  • 1 cup chopped gluten free pretzels* {such as Gratify}
  • 1/2 cup Bob's Red Mill almond meal/flour
  • 1/2 cup dairy free mini chocolate chips {such as Enjoy Life}
  • 3/4 cup creamy peanut butter, almond or sunflower seed butter
  • 1/2 cup honey or maple syrup
  • 1 tablespoon refined coconut oil, melted
  • 1/2 teaspoon pure vanilla extract
INSTRUCTIONS
  1. Prepare 8x8-inch square baking pan by lining with parchment paper. Set aside.
  2. In large mixing bowl, combine rolled oats, chopped pretzels, almond meal and chocolate chips.
  3. In separate bowl, stir together peanut butter, honey, melted coconut oil and vanilla. Pour over oat mixture and stir until completely coated.
  4. Press peanut butter oat mixture into prepared baking pan. Place in refrigerator to set, about an hour.
  5. When granola bars are firm, remove from pan by lifting out with parchment paper. Slice into bars.
  6. Store in refrigerator for a firm granola bar.
NOTES
*Start out with about 2 cups pretzels. After chopping into small pieces, measure out 1 cup.
